Alphabet Meatball Soup
prep time 15 minutes
cook time 20 minutes
Ingredients:
4 cups beef broth
1 can (15 oz) diced tomatoes
1 can dark red kidney beans (drained and rinsed)
2 carrots (peeled and shredded)
2 handfuls of loose baby spinach
24 frozen meatballs
1 tsp italian seasoning
1/4 cup pearled barley or small pasta
Instructions:
Put everything in the pot. Cook for 20 minutes or until the meatballs are warm all the way through and the barley is soft and tender.
Note: My 10-year-old is making this every week until she has the recipe memorized.
