Two weeks of soup

On a very cold day two weeks ago, I decided that in order to simplify my life, and teach my girls to cook in an easy way, we would only have soup for dinner for the next six months. This is not meant to be a punishment to my family. In fact, part of the reason I decided to do it is because every time I serve soup for dinner, my husband says, "I just love soup. I could eat soup for dinner every night." Maybe he said it again two weeks ago, and planted the thought at the opportune moment for me.

** Update: Six months of soup ended up being only two weeks of soup. It was good during that time. Now I am going to start using this blog to record all my recipes and meals. Potato Crust Quiche

Ingredients
2 cups shredded peeled potatoes (about 1 pound)
1 1/2 cups (6 oz) shredded cheddar cheese, divided
1 teaspoon salt, divided
4 eggs
1/2 cup milk
1 cup chopped fully cooked ham
1/2 cup chopped onion
1/2 tsp pepper

Instructions
1. Combine potatoes, 1/2 cup cheese and 1/2 tsp salt. Press onto the bottom and the sides of a greased 9-in pie plate

2. In a bowl, beat eggs and milk. Add ham, onion, pepper, and remaining cheese and salt; pour over potato crust (dish will be very full).

3. Bake at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

Makes 4-6 servings.
